Making your own homemade konjac noodles² is not a hard task and you can do so with a few simple steps that we will go over one by one together.
First, you want to start off by adding about 2 to 2.5 cups of cool water into a bowl. After that add your Konjac Glucomannan powder which is the main ingredient of the dish. You are going to want to add about 2 tablespoons of the powder and mix it well, making sure that there are no lumps remaining. Let it sit for about 15 minutes and come back to check.
Once 15 minutes have passed, do a spoon check to see if the mixture is the right consistency. The spoon check means scraping off the middle of the mixture and dragging it through to see if the separated sides will slowly stick back together. If they do that means you have a good consistency ready for the next step.
Put the mixture in the microwave to heat up for about 3 to 4 minutes. Once it is heated up, it will turn into this gooey and sticky texture. Keep mixing it up and then let it cool off for a bit.
While that is cooling off, mix together in a small bowl, a tablespoon of water, and half a teaspoon of the pickling lime. Pour the water and pickling lime mixture onto the konjac noodle³ batch and keep stirring until it sticks together.
Add the batch into your noodle press machine. Keep in mind to work fast and not let it cool off too much because it tends to get hard and will be difficult to squeeze through the noodle press. Put water to boil in a large cooking pot and start squeezing the noodles just at the surface of the water. Using a knife, you can keep the noodles short or long, depending on your preferences. Continue to do so until all of the noodles are in the boiling water and out of the noodle press. Keep moving them around in order to make sure they don’t stick together. Serve and cook any recipe you like!
